“Phoenix Claws” AKA: Chicken feet.

To start this thing off, we have to do it right. The ubiquitous dish of any legit dim sum spot, Phoenix claws – AKA: Chicken feet.

Yes, they’re edible… and they’re delicious! Your homeboys Tony Bourdain and Andrew Zimmern swear by it and consider it one of the most underrated, least respected and intimidating foods. Preparing this dish is quite the process. First cleaned, the chicken feet are then braised in soy and cooking wine, drained and fried twice. After the second fry (where the skin plumps), the chicken feet are immediately dunked into an ice bath to have the skin pull away from the bone – and this is what makes the chicken feet, “Phoenix claws”. The bad boys are then tossed in a sweet, honey based garlic sauce with hints of orange zest and then placed in individual dishes to be steamed. Although they are already cooked, the steaming obviously heats them through to order, as well as allows the sauce to permeate the skin.

There isn’t any meat on the phoenix claws, you’re basically eating the skin and softened cartilage. The gelatinous pectin filled bites is what makes this dish so fucking DELICIOUS, leaving a piling of little bones on your plate as a trophy of your courageous dim sum domination.

Live a little and try. Order them.

When I’m not bitching about the concept of “brunch”, I’m having Dim Sum. Arguably the best way to spend your weekend mornings – in a crowded Chinese restaurant with old ladies yapping across two tables, steaming rungs of hot curious little bundles of various meats and vegetables wrapped in the pain of arthritic fingers that have seen at least half a pack of cigarettes before second hour of the Today Show… Not to mention the random tourist exercising the few random French words they picked up in their guide books thinking the best place to practice is in a Chinese restaurant saying “bonjour” and “si voo play” to the aunties pushing carts. AHHHH, Sunday! I have my go-to place for dim sum, and it’s hard to stray when you know a restaurant’s dim sum game is strong, however, recently there’s a new player in the Dim sum game and I went to check it out.

There’s nothing that pisses my dad off more than the AC NOT being turned on before he gets home, the idiot neighbours who like their park their ugly shitbox in front of our house… and trying to find parking in Chinatown. I have to admit, fighting over parking spots, let alone trying to navigate orange cones, reserved bus lanes and dodging falling concrete overpasses can get strenuous when all you want to do is eat. We were told about this Chinese spot way up-town a few years ago and we have been going there each time hunger wins over the desire to put ourselves through anxiety and headaches.
