This dish is a slow braise of beef omasum, honey-comb tripe, and lung; not a dish if you’re not accustomed to adventurous eating. Stewed with a melange of earthy and aromatic spices, large pieces of daikon are cooked together with the offal to cut and completely mellowing out the overpowering taste. This dish is served with a side of chili oil which compliments the braising liquid and gives the dish a little kick.
This dish isn’t for everyone; but you can truly call yourself a dim sum veteral once you’ve downed an entire order yourself!
